Starting to drift away from the topic of this particular thread, but since we're still in the Photography tips and techniques section, I guess it's appropriate to say: break it down and ... um ... focus (pardon the pun) on one thing at a time. i.e. use shutter priority to isolate the effect of different shutter speeds, then, once you're familiar with that, do the same for aperture priority. Then, once you know how much motion blur you want (shutter speed) and how much Depth of Field you want (aperture), learn to use your Histogram to determine exposure and adjust ISO accordingly.

Don't worry, you are not alone. Most, if not all, of us went through the same thing. I know I did.

There is so much to think about that when you get out into the field you forget stuff and end up with a poor composition or bad exposure. Fear not, with practice it will start to sink in and it will become natural to operate the camera, evaluate the exposure and compose the image all at the same time.

stick to the keep it simple principle, put camera in auto and focus on an interesting subject, . Take note of shutter speed, iso and aperture the camera chooses.
Then put the camera in aperture or av mode and choose your aperture, decide on the size of you depth of field, then make sure your shutter speed is high enough by increasing your iso.
typically iso 400 f 5.6 with shutter speed anywhere from 1/100 up to 1/4000 depending on the amount of sunlight you are getting.

Try going out and shooting flowers, or other interesting subjects.
