I am a canon user considering jumping ship to D600 and have a question about nikon lenses.

I know fx and dx indicates FF vs crop, but what do others mean, like af-s, g?

Are there many lenses with aperture control ring??

Actually, no - not these days.

The above-entry Nikons have two control wheels on the right hand side of the camera (one on the front of the grip, the other at the rear of the camera) and they do the controlling.

They work so well, it's one of the reasons I adopted Nikon. With the right grip, you don't even need to relocate a finger to operate the controls - very fast.

Only thing - the direction of Nikon's controls seems to be the opposite to every other camera (I think it had to do with the original mounting system). Changing from Minolta film SLRs, all worked the other way around. Nearly drive me crazy for a while, but I'm settled in now.

Basically the D600 seems like an excellent camera, which will work well with most (but not quite all) the lenses Nikon have ever made for SLRs.

Few of the most important ones:

ED Extra dispersed glass (very goood quality glass)
G - indicates that the Aperture control is electronicly done on your camera body not on the lens itself (no aperture ring)
IF - Internal Focus, autofocus is within the lens body so not the whole lens turns around while you use autofocus
DX - means it is for DX cameras/crop camera
VR - antishake option (canon calls it IS).
There is probably some more letters that I forgot.....

The aperture is very easily controlled by a dial in the front and or back of the camera, cameras such as D90/D7000/D300/D600/D700/D800 have a LCD information display on top of the camera which also shows you all information about light/AF/Aperture/shutterspeed etc...
