Can someone please explain what the infinity symbol acutally does and means. I noticed it is on my new 50mm f/1.8 but I've got no idea what the purpose is.

For if you want to focus at infinity, ie really really far away.

Be careful though, a lot of people get trapped into thinking if they want to take a photo of say the moon, set the lens to infinity, when actually the moon will be slightly out of focus if you do this.

Look up 'Hyperfocal Distance' which is much more useful than infinity focus

In summary, infinity focus puts everything that's in your camera lens' field of view from a few meters away to an infinite distance (very far away).

Also note what Jeremy said, infinity doesn't always give you the perfect focus, I learned that after trying some moon shots a few months ago. There's a very good article here explaining it.
