As I have learned that in digital photography, the larger the F number the more things will be in focus.

So like, If I don't want to AF and Don't even want to MF, I can just maxout the F number when I am Lazy right?

or am I missing something?...

Larger F number, video will be darker?

Yes you are correct.

By a large f number, you mean like f22 though where technically that is a small f number. But yes set it to something like this and more will be in focus.

Thing is with DSLRs, not much is in focus because of the sensor size anyway, so I would at least pre-focus and hope that is ok

Well DSLR's aren't made to record video comfortably.
Holding 1kg in your hands 30-40cm in front of your face when trying to control many features and trying to not shake it is not a pleasant thing.
A camera with an electrical viewfinder which could be used during filming would solve that ;)
