Here's my go at taking a shot of the moon last night.

Settings

F-stop: f/11
ISO: 400
Shutter: 1/125

I had a go at sharpening but I'm just an amateur with PS.

Not a bad attempt at all.

Settings seem about right, may you could open up a stop or so and compensate with your shutter speed bumping to 1/250. That may give you the sweet spot of your lens.

There are other things that can affect sharpness:

Quality of 'seeing' - atmospheric turbulence
Lens quality
Stability - was a tripod used?

There are various Photoshop things to can do to improve sharpness. Have a google search for deconvolution and luminance sharpening.

Yes, I did use a tripod and turned the IS off. The lens was a Canon 70-300mm f/4-5.6 IS USM.
