I didn't notice many 1000D owners, but since the 1100D has been released, I have noticed quite a few users already, more than I would have expected. Has the price got something to do with it?

I also notice that it is available in grey.

Price definitely has something to do with it. It is the cheapest new Canon by a big margin, and seems popular by those who do want a DSLR and want to keep costs to a minimum. Actually, I know people who got the 1000D for the same reason.

Don't you think it's a tad bold to suggest that without knowing requirements? Some people may never "outgrow" entry level simply because their subject matter may never call for more featured bodies.
Somebody could easily content themselves with the 1100D but invest in good lenses.

I think I prefer the 3" screen and the rubber feel to a camera.

Does anyone know why the 1000D got recalled?

The 1000D was old is all. I don't think it was actually recalled.
It came out just before the XSi/450D, so it was due to be updated.

I have the 450D\XSi which pretty much shares the same sensor as the 1100D. I recommend investing in glass or at least a good flash gun. Since I bought my 450D, there have been 3 generations of replacements and I'm sure the 650D will come within the next year.
Newer generations offer more features and functions but the actual photo quality improvements is quite minimal.
