The EV bracketing only appears to let me do .3 or .7 can i set it to do a full -+2 swing? Its only my second day with the camera.

Unfortunately that's a limitation they put in lower bodies. The only way to do it is to manually alter the exposure.

SO if i understand right. Can i just take one raw immage and pull the three ev steps out of the raw in post processing?

That's possible, but not optimal. Manually take as many photos as needed for the range. You can either use +/-EV setting or do it fully manually. Of course best if you use a tripod so you don't have to worry about alignment.

You can do so by the colors will not turn out natural as if you actually did 3 different exposures.
